2 pounds red potatoes
2 oz. oil
2 t. kosher salt
1 package bacon (12 oz. or 1 pound)
1 c. sour cream
1 bunch green onions, chopped
1 1/2 c. cheddar cheese, grated
4 oz. butter, melted
2 T. cracked pepper

Directions:
Directions:
In a large bowl toss potatoes in oil and salt until coated. Place potatoes on a sheet pan. Bake at 350º until tender. While potatoes are baking, cook bacon and cut in 1-2 inch pieces. When potatoes are cool enough to handle,(you want them still warm) cut into large bite sized chunks. Place potatoes in a large serving bowl or 13x9 pan. Mix in remaining ingredients. At this point you may serve at room temperature in serving bowl or bake until just warm and serve, it is good both ways.

I am not a huge fan of traditional potato salad so this recipe is my compromise.
