1 10 oz. package of frozen chopped spinach
1 bunch green onions, chopped
4 eggs
16 oz. cottage cheese
2 c. shredded cheddar cheese

Directions:

Cook or microwave spinach and squeeze to remove liquid. Combine with other ingredients. Pour into a round quiche pan or a pie plate. Bake uncovered, 1 hour at 325º Serve with salsa if desired. Double for a 13x9.

This is a super easy breakfast casserole and it is a great freezer meal. Over the years I have had the habit of freezing meals for busy times. It is a handy trick when I am outside all day and still need to have dinner for the family. I found this recipe in a freezer cookbook, I didn't keep any other recipes but this one. I feel if you find at least one recipe that you will use for the next 20 years, it is worth the 30.00 price of a cookbook.
