4 c. shredded cheddar
4 c. shredded monterey jack or pepper jack cheese
2 4 oz. canned chopped green chilies
1/2 c. milk
6 eggs

Directions:
Directions:
Layer chilies and cheese in a 13x9 pan. Beat remaining ingredients and pour over. Bake at 350º until set about 40 minutes. Serve with salsa and garnish with green onions and cilantro.

This is an easy breakfast casserole and it is a yummy way to start a work Saturday. Over the years we would have many working Saturdays as a family, working in the garden, orchard or on a project. My kids are some of the hardest working people I know. It is always a delight to work alongside them and I am always surprised how much they can accomplish in a day. We would try to start the work day with some kind of breakfast and then if it was a particularly hard work day (like cleaning out the ditches) Dad would take us all out to Sonic for lunch or milkshakes. Fun times, good memories.....
