Charred Red Onion Jam

1/4 C Olive Oil
2 Red Onions Thinly Sliced
2 Tbsp Sugar
1/4 C Red-Wine Vinegar
1/4 C Red Wine (Zinfandel)
1/2 tsp Lemon Juice
Salt and Pepper (Ground) to taste

Directions:
1. Pour Olive Oil into a saucepan, add Sliced Red Onion and saute until onions begin to wilt and sweat, do not allow to burn. Cook on low heat for 8 - 10 minutes, add Sugar, saute for 1 minute.
2. Slowly add the Vinegar and Wine, bring to a simmer cooking until liquid has evaporated and Onions have caramelized, approximately 3 minutes. Hold warm.
3. Prepare 4 6-8 oz Beef Patties, Season with Salt and Pepper just before grilling on a preheated Grill on Medium-High heat. Char burgers on each side, approximately 6 minutes each side for medium-rare. Top each Burger with Cheddar Cheese allowing to melt, serve on warmed Bun with Mayo, sliced Tomato and topped with Red Onion Jam.

Soft Buns Warmed
