3 or 4 chicken breasts
1 package button mushrooms
fresh lemon juice
butter
heavy cream
Dijon mustard
1/2 cup white wine.

Directions:
Directions:
Pound your chicken or turkey cutlets between plastic sheets to 1/4 in thickness. They will be fairly large at this point. Season each side with salt and pepper and dust with flour on each side. In a large skillet, melt 3 T butter and saute breasts until cooked through on each side and nicely browned. Remove from pan and keep warm in 200 degree oven. Clean and slice the mushrooms and add to the pan. You will need to add more butter to keep from sticking. When mushrooms are tender and brown and released their juices, add the wine to deglaze. Cook until wine has almost evaporated and add some cream and about 1 tsp mustard, salt and pepper add juice of 1/2 lemon.. Cook until slightly thickened and serve over chicken. Sorry, no exact measurements, but easy to determine!
