Pre-Heat oven 350º


⅔ cup shortening
2⅔ cups sugar
4 eggs
1 (16 ounce) can sweet potatoes or yams, drained
⅔ cup milk
3⅓ cups all-purpose flour
2 tsp. baking soda
1½ tsp. salt
½ tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground nutmeg
2 tsp. grated orange rind
1 cup chopped pecans (Optional)

Grease two (2) 9x5x3-inch loaf pans. Cream shortening and sugar until fluffy in a large mixing bowl. Stir in eggs, sweet potatoes and milk. Blend in flour, baking soda, salt, baking powder, cinnamon, nutmeg and orange rind. Stir in pecans. Pour mixture into greased loaf pans. Bake for 1 hour 10 minutes or until wooden toothpick inserted into center comes out clean.
