1 ¼ cups flour
¼ cup granulated sugar
3 tablespoons confectioners’ sugar
1 teaspoon lemon zest
¼ teaspoon fine sea salt
10 tablespoon unsalted butter

Curd
4-6 lemons
1 ½ cups sugar
2 large eggs plus 3 yolks
1 ½ teaspoons cornstarch
4 tablespoons cold butter cut into cubes
¼ cup olive oil

Directions:
Directions:
Heat oven to 325°, lining a 9x9 baking pan with parchment paper hanging over both sides. (to be used later as handles to lift bars from the pan)Pulse together flour, sugar, powdered sugar, lemon zest, and salt in processor. Add butter and pulse until crumbly dough forms. Press dough into pan and bake 30-35 minutes until golden brown.

Grate ½ tablespoon lemon zest and set aside. Squeeze lemons to yield ¾ cup juice. Whisk together lemon juice, sugar, eggs and yolks, cornstarch and sea salt over medium high heat until boiling. Remove and strain into bowl, whisking in olive oil, butter, and lemon zest.

When shortbread is done, remove from oven and pour curd onto it, return pan to oven, baking 10-15 minutes until top sets. Allow to cool to room temperature, then refrigerate until cold before cutting into bars. Sprinkle with confectioners’ sugar and sea salt only just before serving.
