1 1/4 cups water 110°
2 tablespoons olive oil
2 ½ teaspoons instant yeast
1 tablespoon sugar
3 cups all purpose flour
1 ¼ teaspoons salt
¼ cup dry nonfat milk
2 tablespoons potato flour or ¼ cup mashed potatoes
1 tablespoon dried chives
1 tablespoon dried parsley

Filling ideas:
Salami and provolone
Smoked turkey and cheese
Spinach and feta
Broccoli and mozzarella

Directions:
Directions:
In a large bowl combine the water, olive oil, yeast and sugar. Add the flour, salt, dry nonfat milk, potato flour, and herbs. Mix and knead the dough until it becomes soft and supple. Cover the dough and let rise for an hour. After the dough has risen divide it into quarters. Cover the pieces you’re not using while you shape one piece into a rectangle 5x10 inches. Cover all but 1 inch of the dough along the short edges with the filling of choice. Starting from one short end, fold the dough over the filling and loosely roll it up to make a spiral. (Rolling it too tightly will cause it to blow out the sides as it expands) Pinch the dough together to seal and transfer, seam side down to a lightly greased baking sheet. Leave plenty of space between them as they will double in size as they bake. Cover and let rise for 40 minutes. Preheat oven to 350° while dough is rising. Bake in oven for 23-25minutes, until rich golden brown. Remove, cool completely and serve.
