3 Cups Chopped Watermelon
1 small chopped Tomato
1/4 small chopped Onion
1 clove smashed Garlic
1/2 chopped Jalapeno Pepper (Seeded and membrane removed)

1 splash of Basaltic Vinegar (splash)
1 splash Olive Oil
a pinch of Sea Salt
a pinch of cracked black Pepper
a pinch of Orange Peel.

Directions:

Refrigerate the first five ingredients until ready to serve.

Take all ingredients and pulse blend. Some people like their gazpacho smooth, I prefer a chunky texture. Serve chilled.

I fell in love with this dish poolside in Nicaragua. It is a light and refreshing item for lunch. I have been known to garnish with some boiled shrimp to make this a lunch main course.
