2 steak tomatoes
1 c cherry tomatoes chopped
1T garlic
Salt and pepper to taste
1 1/2 mozzarella cheese
1 c half and half
olive oil
1/4 c chopped onions
2 eggs

Directions:
Directions:
Sauté onions in olive oil 1 minute and add garlic
Sauté for 1/2 minute
Cool and toss with cherry tomatoes
Whisk eggs and milk
Add salt and pepper
Preheat oven to 350*
Spray casserole with olive oil
Place tomatoes, onion, and garlic mixture on bottom of dish
Top with 1/2 of cheese
Pour milk and egg mixture over this
Lay thick sliced steak tomatoes on top
Cover with remaining cheese
Bake for 50 minutes or until done

I just used 2%milk and halved the recipe for my husband and me. (Except I used 1 c of mozzarella cheese and used 1/2 c of Parmesan cheese on top.) Didn’t use 1/2 of the recipe for the cheese!
