Ingredients: 2 eggs 1 cup mayonnaise 1/2 tsp dry mustard 1 tsp Old Bay seasoning 1 tsp dried parsley 1 tsp dill 1/3 cup onion finely chopped 1 1/4lb of boneless skinless cooked salmon..Either poached or grilled & refrigerated When ready to use in this recipe coarsly flake the salmon 2 cups of 1/2in diced loaf white bread,crust removed. 2 cups 1/4in dice baked potato such as russet..Refrigerate until ready to use. 2 Tbsp. butter divided 2 tsp Old Bay Seasoning

Directions:1) In a bowl mix the first 7 ingredients with a fork or wire wisk. This is the dressing. 2) In another larger bowl add the potatoes, the bread cubes and about 3/4 of the dressing. Mix together until bread has absorbed the dressing. 3) the consistency of the mixture should be such that it can be molded and hold its shape. You may need to add more dressing at this point. 4) Gently mix the salmon .into the bread & potato mixture. Add more dressing as needed. 5)Drop packed 1/2 cups of the mixture onto a greased cookie sheet. Flatten slightly with a table spoon to make a slight depression in the center. 6) Sprinkle the cakes with Old Bay seasoning and top each with a small paddy of butter. Bake in a 400*f oven for 10 to 15 minutes ,until starting to get golden brown. serve hot or cold. Note: A) For appetizers use 1/4 cup cakes B) Serve these with your favorite tarter sauce.
