BBQ Sauce Ingredients

1. 1 cup BBQ sauce
2. 1 cup sweet Orange Marmalade
3. 2 tbsp. Soy Sauce


Crispy Chicken Ingredients

1. 3-4 Chicken Breasts
2. 1 Cup AP flour and/or ( 1 cup cornstarch )
3. salt and pepper to taste
4. 2 eggs
5. 1/4 cup olive oil

BBQ Sauce Instructions

In a sauce pan , add the BBQ sauce ,marmalade , and soy sauce . Turn the heat
on low and let it simmer for about 20 minutes , stirring a few times .
Meanwhile , cut chicken breasts into 3/4 inch cubes . In a bowl beat 2 eggs ,and
in another bowl mix dry ingredients .
Dip the chicken pieces in egg mix , then roll chicken in flour (or cornstarch) until well coated .
Set off to side on plate.
Add oil to frying pan on medium to high heat . Once oil is hot add chicken to the pan .Cook 3-4 minutes each side when browned on all sides , remove from pan on paper towel and let drain.
Then and chicken to sauce and toss .Place on top of white rice and eat .

( I like to sautee mushrooms , bell pepper [ red,yellow and green] ,and onions in butter )
