Buttermilk Bran Muffins Recipe

3 c. raw bran
1/4 c. melted shortening
1 c. boiling water
1 egg
1 c. sugar
2 1/3 c. buttermilk
2 1/2 c. flour
2 1/2 t. baking soda
1 t. salt
3/4 c. raisins (if desired)

Directions:
Directions:
Combine one cup of the bran with the boiling water and the melted shortening. Let stand. Combine remaining two cups of the bran with the sugar, egg and buttermilk. Mix well with a wire whip. Add the flour, soda and salt, along with the bran, water and shortening mixture. Mix all with the wire whip. Stir in raisins if desired. Spoon into greased or paper lined muffin tins 2/3-3/4 full. Bake at 400º for 20 minutes. Makes 24 muffins.

This recipe can be kept in the refrigerator for 3 weeks if you want to have fresh muffins on hand. These are a good way to start the day, the buttermilk has more protein than regular milk.
