Ingredients:
Ingredients:
2 c. flour
1 T. baking powder
1/4 t. baking soda
1/2 t. salt
1/2 to 2/3 c. buttermilk
3 oz. cream cheese
1/4 c. butter
1/4 c. shortening
1/2 c. raspberry jam
Confectioners icing if desired (found in the miscellaneous section)

Directions:
Directions:
In a medium bowl, stir together flour, baking powder, baking soda and salt. Using a pastry blender cut in the cream cheese, butter and shortening until mixture appears crumbly. Stir in enough buttermilk to just moisten the mixture, but don't allow it to become sticky or gooey. Turn onto a lightly floured surface and knead lightly only 4 or 5 strokes just enough to form a nice lump. Grease the center portion lengthwise, of a baking sheet about 4 inches wide. On waxed paper roll the dough into a rectangle that measures 8" x 15". Turn the rectangle onto the baking sheet and remove the waxed paper. Spread the raspberry jam lengthwise down the center of the dough, leaving 3 inches of dough on either side of the jam. Make cuts at 3/4" intervals along the length of the dough, both sides, cutting all the way up to the jam but not cutting into the dough underneath the jam. Fold the cut strips up over the jam, overlapping them significantly. Bake at 425º for 15 minutes. Check for doneness by using a knife to carefully separate the pastry between two of the strips and look for any signs of doughiness or gooiness. Bake one or two minutes longer if necessary. Remove from oven and ice with confectioners icing while warm. Best served immediately.

Personal Notes:
When my kids wanted something sweet for breakfast, this was a go to recipe. Fast and easy enough that even the boys wouldn't mind making. My boys love to cook but they also don't like waiting for breakfast.
