Tart Shell: Mix in food processor, 1 c. flour, 2 T. butter, 2 T. powdered sugar, press into a 9 inch removable tart pan. Refrigerate for 15 minutes and then bake at 350º for 15 minutes, cool.

Filling: Whisk well, 3 large eggs, 1 c. sugar, 1/2 c. fresh lemon juice, 2 1/2 T. flour. Pour into baked pie shell and bake 15-18 minutes (until set) cool. Top with sifted powdered sugar or whipped cream. Top with raspberries, blueberries, mint etc. if desired.
