2 c mashed sweet potato
1 stick butter (add while potatoes are hot)
1¼ c sugar
1 egg, beaten
¼ c milk
1 tsp vanilla extract
½ tsp lemon extract
1 pie shell

Directions:
Directions:
Boil potatoes until tender. Peel and mash while hot and add butter. Add remaining ingredients. Pour into a prepared uncooked pie shell. Bake in 350º (moderate) oven until filling is set and lightly browned.(No length of time on recipe)

I found this recipe of Ms. Jean’s on a piece of paper in Mama’s recipes. Ms. Jean was a good friend of Mama’s in Willacoochee. She was married to Mr. George McCranie. Mama must have liked it to have written it down.
