2 cups sugar
2 Tbsp corn meal
1 Tbsp flour
4 eggs, unbeaten
¼ cup melted butter
¼ cup milk
¼ cup lemon juice
4 tsp grated lemon rind
Unbaked pastry shell

Directions:
Directions:
Preheat oven to 350 degrees. Mix sugar, corn meal and flour. Add eggs, one at a time, and beat well after each.
Stir in butter, milk, lemon juice and rind; mix well.
Pour mixture into pie plated lined with unbaked pastry. Bake on lower self of oven for 45 minutes or until done.
Allow to cook before cutting.

This pie has a lovely flavor and was a favorite of my Mother's. It is from the North Carolina and Old Salem Cookery cookbook, a gift from Brenda Sherrill and Kay Lord when I first moved to Winston-Salem in 1966.
