2 lbs. mixed ripe tomatoes, different shapes and colors
Salt
Balsamic vinegar
Olive oil
1 clove garlic, peeled and grated
1 fresh red chile pepper, seeded and chopped
Several fresh basil leaves, chopped
Black pepper

Directions:
Directions:
Slice the tomatoes into different shapes and sizes. Place tomatoes into a strainer (with a larger bowl placed underneath the strainer), dash them with several good pinches of salt, and give the strainer a couple good shakes (don't worry, most of the salt will sweat off with liquid from the tomatoes, allowing the the tomatoes to better soak up the other ingredients). Let tomatoes sit for approximately 30 minutes.

In the meantime, mix the dressing: 2 parts oil to 1 part vinegar, minced garlic, and chile pepper.

Transfer tomatoes from the strainer to a large mixing bowl (discarding the juice that collected underneath the strainer). Add the chopped basil, dressing, black pepper and additional salt to taste, if needed. Mix well and serve.
