1-1/2 sticks margarine - softened
1-1/2 cups sugar

5 egg yolks
2-1/2 cups self-rising flour
1-1/2 cups milk
2 teaspoons vanilla flavoring

Directions:
Directions:
Cream margarine and sugar. Then add the egg yolks, one at a time and mix well. Add the flour and milk alternately. Then add vanilla. Makes four layers.

Cook in the oven at 325º until light brown.
 

Icing for Coconut & Raisin Cake


Ingredients:

2 cups sugar
3/4 cup milk

1 box raisins - put in hot water to soften
1 package (7 oz.) coconut

5 egg whites

Directions:
Directions:
Mix sugar and milk until creamy. Cook and when it begins to boil, turn down the heat a little and boil for 1-1/2 minutes, stirring constantly. Remove from burner.

Drain the raisins. Add the raisins and coconut.

Beat the egg whites until stiff and add to the mixture a little at a time. When putting on layers, use a knife to stick holes in the layers all around so icing will run through.
