2 small packages vanilla instant pudding
1 box graham crackers
3 cups milk
1 medium size ( 8 oz.) Cool Whip

Directions:
Directions:
Combine pudding and milk. Beat until thick; fold in Cool Whip.

In an 9 x 13-inch dish, layer the bottom with the whole graham crackers. Top with pudding mix, a layer of graham crackers, pudding mix, ending with a layer of crackers on top.
 

Icing for Chocolate Eclair Cake


Ingredients:

1/3 cup cocoa
1/4 cup evaporated milk
1 cup sugar
1 stick margarine - melted
1 teaspoon vanilla flavoring
Pecans - chopped

Directions:
Directions:
Mix the cocoa, evaporated milk, and sugar. Bring to a boil, stirring constantly. Let cool one minute.

Add the margarine and vanilla; mix thoroughly and pour over the cake.

Sprinkle pecans on top.

Refrigerate overnight before serving.
