½ c. white flour
½ tsp. salt
½ c. whole wheat flour
2 T. molasses
½ c. corn meal
2 tsp. baking powder
½ c. quick cooking oatmeal
2 eggs
⅓ c. applesauce OR ¼ c. vegetable oil
1½ c. milk

Directions:
Directions:
Mix all dry ingredients. Add applesauce or eggs (slightly beaten).
Add milk. Additional milk may be added to achieve desired consistency.
Pour batter onto hot griddle by ⅓ cupfuls (more or less depending on the size of the pancake you want), and flip them when the top bubbles and bottom is brown. Serve them up hot with plenty of butter and maple syrup.

This recipe was actually given to me (and prepared for me) by my brother, Steve Friday. He's a pretty good cook in his own right; bakes better pies than I do. I have made these for friends at a brunch and also for some of my husband's family. They always get great reviews.
