Spaghetti Squash Pad Thai Recipe

Ingredients: 1 large spaghetti squash 1/4 c (4 Tbsp) olive oil 1 to 4 Tbsp fresh minced ginger 1 to 2 Tbsp minced garlic 2 onions, slivered 8 eggs 1/2 c cashews,chopped 1/2 c peanuts, chopped 1/4 c green onion OR fresh or dried chives 1/2 c Pad Thai sauce (purchased or make your own below)
Optional: 2-3 lb chicken thighs AND/OR 1 lb shelled shrimp

Directions:Prick squash all over with small sharp knife, cook in microwave until soft but not mushy (about 15-18 minutes). Remove, let cool. Toast cashews and peanuts in pan in hot oven until just golden and fragrant. Heat olive oil in very large skillet over medium heat. Add garlic and minced ginger to the hot pan and saute until garlic is a light golden, careful not to burn it. Remove garlic and ginger from pan with slotted spoon and set aside, leaving oil in pan. If using chicken add to pan and saute until cooked. If using shrimp add to pan and saute until no longer translucent. Remove chicken/shrimp with slotted spoon and dice chicken and halve shrimp if large. Add onions and saute until soft. Add eggs and scramble. Cut cooled squash lengthwise into halves. Scoop out seeds and discard. Scoop out squash strands and place in large serving bowl. Add squash, cooked garlic and ginger, chicken and/or shrimp if using, and Pad Thai sauce to onions and eggs in the large skillet and let simmer for 15 minutes until the sauce thickens. Add more sauce if desired. Garnish with green onion and chopped cashews. |

Notes: Yes, this is amazing. If you are looking for vegetarian main dish recipes that non-vegetarians love this is it. Adamant meat-eaters can feel free to add cooked diced chicken, turkey, pork, shrimp, salmon seafood, etc. If you have both in your family just set aside some as a vegetarian option and some with meat/seafood addition. Guaranteed everyone is happy.
