2 (21/2 - 3 lb.) Fryer Chickens
BBQ Chicken Dry Rub
2 Bottles Italian Dressing
2 Gallon Freezer Zip-lock Bags


Glaze

1 C Honey
2 Tbsp Balsamic Vinegar

Directions:
Directions:
1. Place cleaned and trimmed Chickens in bag with Italian Dressing and marinade in refrigerator for about three hours. Leave on marinade that sticks to chickens.
2. Sprinkle entire Chicken with BBQ Chicken Dry Rub working under any loose skin areas.
3. Heat smoker to 275-300 degrees while Chicken is marinading with Dry Rub.
4. Place Chicken in Smoker and after smoking an hour or hour and half turn chicken over spraying both sides with Apple Juice. Turn Chicken over and place back on grates, prepare Glaze.
4. At the two hour mark, cut chicken in half and apply Glaze to both sides of Chickens and place back on grates with skin side up.
4. After 15 minutes apply Glaze to skin side only and smoke for additional 30 or 45 minutes to fully cook. Internal temperature of done Chicken should be 165 degrees.
