Ingredients: 1 T olive oil 2 lbs lean ground beef 4 1/2 cups shredded cabbage 2 T dried minced onions 2 (14.5 oz) cans diced tomatoes (no sugar added) 2 tsp onion powder 1 1/2 tsp minced garlic 2 tsp salt (or to taste)(IP salt if you have) 1 tsp black pepper 1/2 tsp oregano 1/2 tsp thyme 3 cups beef broth (fat free/low sodium)
Optional: 1 cup cooked rice

Directions: |
Directions:Brown ground beef in olive oil. Half way thru add minced onion, onion powder and garlic. Drain any fat if necessary. Place ground beef mixture with all other ingredients in a large soup pot and stir well. Bring to a boil and then simmer 30 minutes to 1 hour. Adjust seasonings to taste. Stir in cooked rice & heat for 5 minutes if using. Note: fire roasted diced tomatoes add to flavor. If tomatoes are large or chunky use an immersion blender to puree. Servings for Ideal: Entire recipe = 32 oz lean protein + 8 cups veggies. 1/4 recipe = 8 oz lean protein & 2 cups veggies
