½ cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas (3)
1 ½ cups flour
1 tsp baking soda
¼ tsp salt
½ cup minute oatmeal
1 cup pecans, chopped
1 tsp vanilla
powdered sugar for dusting

Directions:
Directions:
1. Cream shortening and sugar. Mix well. 2. Add eggs and mix well. 3. Add bananas. 4. Sift flour, soda and salt. Add mixture. 5. Add oatmeal. 6. Stir in pecans and vanilla. 7. Pour into greased 9 x 5 loaf pan. 8. Bake at 350º for 50-55 minutes. 9. Sprinkle with powdered sugar. Serve warm, or refrigerate.
