CHICKEN AND OLIVES

8 chicken thighs with skin
salt and pepper
fennel
garlic
rosemary
1 T olive oil
2 Meyer Lemons
1 cup mixed olives
1 cup chicken broth
3 T chopped parsley

Directions:
Directions:
season thighs with salt and pepper and place in one layer in 9x13 pan. Sprinkle seasoning on top. Drizzle with olive oil. Tuck in lemon wedges. Let marinate 15 minutes. Heat oven to 375. Put in oven for about 20 minutes. Take out and add olives and chicken broth. Cover tightly and cook for another hour.
When done, pour juices into pan and boil, reducing liquid by half. Spoon juices over chicken and serve.
