1 TBSP olive oil
1 Cup chopped onion
2 tsp minced garlic
1 LB ground beef or turkey
1 32oz chicken broth
2 15oz diced tomatoes with juice
1 6oz tomato paste
1 tsp oregano
1/2 tsp Italian seasoning
2-3 TBSP fresh basil
8oz broken lasagna noodles or other pasta
1/2 cup grated parmesan
1 cup shredded mozzarella
Salt & pepper to taste
Ricottas cheese for serving

Heat the oil in a large pot over medium heat,. All the onion and cook for 2-3 minutes. Stir in the garlic and cook for another minute. Add in the meat and cook until brown. Drain excess grease. Add chicken broth, tomatoes, and paste. Stir until well combined and add oregano, seasoning, and basil. Bring to a boil and then add the noodles. Cook until tender 8-10 minutes.

Stir in parmesan, mozzarella, salt & pepper. Serve and top with Ricotta.

I have used elbows or rotini instead of broken noodles. I usually don't use as much cheese as it calls for either. And you know me I never really measure seasonings to the exact amount.
