Ingredients: 1 1/4 C flour 1/4 t. salt 8 T. butter, cut into pieces 1/4 C sour cream 2 t. lemon juice 1/4 C cold water

Directions: |
Directions:Sift the flour and salt together in your food processor. Cut in the chilled butter until mixture is coarse and crumbly. Mix the water, lemon juice and sour cream together in a small bowl and add all at once to the above mixture. Pulse until it comes together into a tacky dough. Turn out onto a lightly floured board and roll into a shaggy round. Place your desired filling in the center and fold the edges in (but not so far as to cover the filling entirely). Brush with milk and then, depending on whether your filling is sweet or savory, sprinkle with raw sugar or kosher salt. Transfer to a parchment lined baking sheet and bake at 375º for 25-45 min (depending on the filling). |

Notes: I love this recipe! It's originally from the Smitten Kitchen and Georgia was the first to give it a try. It's bomb-proof! And galettes are so fun to experiment with. Try different fruit combos with creme fraiche for breakfast or ice cream for dinner. We love shredded chicken, caramelized onions and smoked gouda/swiss...served with a salad for a simple dinner. Or divide the dough into small rounds and make appetizer size galettes. This is one of those super basic, back pocket recipes that we pull out time and again!
