Ingredients: 2 cups cooked chicken cut in 1/2 inch dice. 2/3 cup finely chopped celery 1/3 cup dried cranberries (craisons) 1/3 cup toasted pecans chopped 1/3 cup finely chopped onion 1/3 to 1/2 cup mayonnaise depending on how creamy you want the salad 2 tsp lemon juice 1/8 tsp each of salt and pepper or to taste

Directions:In a medium sized bowl. Combine the first five ingredients In a smaller bowl combine the mayonnaise , lemon juice and salt and pepper. Add the mayonnaise mixture to the chicken mixture and gently combine. Refrigerate until ready to serve To serve : Spread blue cheese dressing on buns or croissants and fill buns with chicken salad. or serve chicken salad on a bed of lettuce topped with a dollop of blue cheese dressing.
