Cranberry Orange Bread Recipe

2 C flour
1/2 t. salt
1 1/2 t. baking powder
1/2 t. baking soda
1 C sugar
grated zest and juice from one orange
2 T. oil
1 egg
1 C chopped pecans (optional)
1 C fresh cranberries, cut in half and tossed lightly with 1 T. flour

Directions:
Directions:
Sift together the dry ingredients. Combine the orange zest, juice, oil and enough boiling water to make 3/4 C liquid. Add orange mixture and egg to the dry ingredients. Gently fold in the nuts and cranberries and mix until just incorporated. Spoon into greased and floured bread pan. Bake for about 1 hour at 325º or until a tester comes out smooth.

We somehow only make this bread during the holidays; maybe it's because of the cranberries. But it's a pretty loaf wrapped in parchment and given as a holiday treat, and it makes the most lovely toast! (Well..almost the most lovely toast. Jeff's sourdough cranberry orange is even better...but for those of us without a pizza oven, this is a gem of a quick bread!)
