Meat dumplings
1 lb your choice meat (ground veal, ground turkey, ground buffalo, etc.) original recipe is made with veal.
2 handfuls bread crumbs
2 handfuls shredded Parmesan or Romano or pecorino
1 egg
Pinch of nutmeg, salt, pepper

Veggies
2 carrots, diced
3 celery stalks, diced
1 yellow onion, diced

1 bay leaf
1 can white kidney beans
1 can diced tomatoes
3 cups chicken stock (not broth!)
2 cups beef stock

2 cups egg noodles

salt and pepper
1/2 tsp. rosemary
1/2 tsp. garlic powder

Directions:
Directions:
To prepare meat dumplings: Mix all ingredients together (using your hands works the best) until completely combined.
Pinch off small amounts and roll into small 1" round balls. Set aside.

Sauté veggies in a little olive oil at the bottom of a soup pot until onion is almost translucent.

Then add next 5 ingredients and bring to a boil.

Reduce heat to medium heat and add egg noodles, meatballs and spices. Simmer about 15 min until noodles and meat are cooked.

Adjust spices to taste and serve.
