Barbecue Bean & Burger Casserole Recipe

1 lb. ground beef
1/4 cup onion, chopped
1 28 oz. can Bush Original baked beans (or other brand) If you need to stretch the amount, you can add another small can of beans.
3/4 cup barbecue sauce
2 tablespoons brown sugar
1 package refrigerator biscuits (6-8)
1 cup grated cheddar cheese

Directions:
Directions:
Preheat oven to 375º

In a large skillet, brown ground beef and onion. Stir in beans, bbq sauce and brown sugar, and simmer until hot.

Place in a casserole dish. Top with biscuits.
Bake until biscuits are done.
Place cheese on top of casserole. Allow to rest in oven until cheese is melted.

Serve a biscuit or two with the bean mixture on top.

This is called “Kay Oliver Casserole” at our house, because she had it first. It is a very old recipe that was intended to be made with plain old Campbell’s beans and Kraft bbq sauce and small refrigerator biscuits. So while the brands don’t matter, you might need to leave out the sugar if your beans or bbq sauce are already very sweet. If you use 8 huge modern biscuits, there will be too much biscuit for the amount of sauce, so only use part of the package. You can still find some puny, store brand biscuits sometimes, which are perfect.
