1 1/2 C shortening
4 1/2 C sugar
3 eggs
3 t vanilla
1 large can (29 oz.) pumpkin or 4 C pumpkin puree
3 t baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. salt
3 tsp. cinnamon
7 1/2 C flour
2 packages chocolate chips - 4 C
Directions:
Directions:
Cream together shortening and sugar. Beat in eggs and vanilla. Stir in pumpkin. Mix together baking powder, soda, salt, cinnamon, and flour. Add to creamed ingredients. Mix well. Add chocolate chips. Drop by spoonful on lightly greased cookie sheet. Bake at 375 for 15 minutes.

Makes about 8 dozen and freezes well

This recipe was given to me by Chelly Harrison. She is a CODA (child of Deaf adult) and a friend. She had twin boys at the same time I had Anne' and we would spend time together with play dates. She shared all of her mom's pumpkin recipes with me. I have about 12. This is a really nice cookie that is cake like and moist. YUM
