1 can Rotel tomatoes and green chilies - original
1 can Rotel tomatoes with lime and cilantro
1 28 ounce can whole tomatoes with the juice
½ C. cilantro (more to taste)
½ chopped red onion
2 garlic cloves
1-2 jalapenos (seeds and ribs removed)
¼ tsp. cumin
¾ tsp. kosher salt
¼ tsp. sugar
½ lime, juiced

Pour all ingredients into your food processor. Pulse until you get a salsa consistency to your liking ( I pulse 4 or 5 times).

I keep the salsa in the fridge for a while to make sure all of the flavors blend together, but I try to serve it close to room temperature. Do not be fooled by the canned ingredients - this salsa tastes like fresh salsa and your guests will never know. In the summer, when tomatoes are ripe, I do add a few to the mix. I also throw everything into a big bowl and then process half at a time - to avoid any overflow mess
