7 large whole eggs
1 ½ c. heavy cream
2 c. grated cheese (Swiss, cheddar, fontina - whatever you like)
¼ c. butter
1 whole large onion, diced or thinly sliced
1 clove garlic, minced
2 c. chopped vegetables (sliced white mushrooms, artichoke hearts, spinach, etc.)
1 c. cooked diced meat or crumbled bacon
1 unbaked deep dish pie crust or two regular ones
Herbs of your choice and salt & pepper to taste

Preheat the oven to 375º F.
If you are using bacon (about 3/4 lb.); fry it til crisp, crumble and set aside. Then pour out the grease but don't clean the skillet. Melt the butter in same skillet. Saute' the onions and vegetables until crisp tender. Remove from heat and allow to cool (about 15 minutes).
Press the pie crust into deep dish tart pan or pie plate, or you can use two regular pie pans.
In a large bowl whisk the eggs and cream until thoroughly combined. Add the grated cheese, vegetable mixture, and meat. Mix in a little parsley or other herb.
Pour into pie crust, set on a baking sheet, and cover loosely with a piece of foil. Bake for about an hour. If it's still too jiggly leave it a few more minutes. It should be almost set when you take it out. Allow to rest for 10 or 15 minutes before slicing.
This is a great recipe for using up left overs! Ham and cheddar cheese with broccoli or asparagus; sausage and Asiago or Fontina cheese with red peppers; the combinations are endless!!

This is the favorite dish of my mahjongg sisters! You can make this ahead and refrigerate or freeze until ready to use. Just reheat in the oven at 350 F. until heated through. Just remember, less veggies and meat means more custard.
