4 whole chicken breast, skin on, bone in.
1 cup chopped celery
1/2 cup chopped onion
1 cup Mayonaise
salt and pepper to taste
1 tbsp. cider vinegar

reserve celery tops and extra onion

Directions:
Directions:
Place chicken breasts in a pot of water with reserved celery, onion, salt and pepper, bring to a boil and then simmer until breasts are done ( 45 minutes).

Remove meat and cube. Add celery, onion, mayonaise, salt and pepper to taste and about a tbsp. of cider vinegar. refrigerate.
