3ish Tbsp olive oil
1/2 c. + 2 Tbsp maple syrup
2 medium onions, thinly sliced
1 1/2 c pecans, chopped
16 oz fresh spinach
16 oz butternut squash ravioli
feta cheese
salt
pepper

Directions:
Directions:
Heat 2ish Tbsp. olive oil over medium heat. Add onions and saute. After about a minute, add the 1/2 c. maple syrup. Keep on med to med-low heat until the onions are cooked through and carmelized. Turn heat down to low.
Toast pecans over med-high heat. Set aside.
Heat 1ish Tbsp. olive oil over medium heat. Add spinach one handful at a time and cook down, stirring, until all spinach is wilted.
Cook ravioli according to package directions. I like Rising Moon frozen raviolis, and I cook two packages of it. Once the pasta is drained, add the nuts, spinach, and onions (with syrup), and stir. I usually add another couple Tbsp. of syrup, but it's up to you.
Season with salt and pepper.
Garnish with feta, if you'd like.
