1 larger (fresh) cauliflower (no brown spots or remaining leaves withered.
3 different cheeses (size of cauliflower determines how many slices of cheese 6-7 usually enough): swiss, mild
cheddar and brick
1/2 teaspoon salt
1 tsp ( more or less depends on personal pepper taste) of finely ground pepper
1/2 teaspoon or more of ground thyme
2/3 cup of flour: careful with this put as much flour as the melted butter will hold.

01. Rinse cauliflower in cold water place core side up in large cooking pot. Cook until "aldente" let it be just a little under cooked
02. While cauliflower cooks, make sauce and preheat oven to 350*
03. make sauce: place butter in large skillet:; melt on medium high fire; after butter completely melts raise flame under skillet for few moments, the add flour blend into melted butter, lower flame

After sauce cooks and cauliflower cooks; place cauliflower in large baking dish, cover cauliflower (cauliflower MUST be hot) with slices of cheese, alternate slices while covering cauliflower;then use sauce to paint over cheese, spatula will do, sprinkle pepper, place in oven for 10-15 minutes; until cheese is melted and exterior of cauliflower turns slightly brown..DO NOTOVERCOOK

Place cauliflower in middle of round quiche type pan, spread carrots and broccoli around the sides of it then spread the cheese/sauce on top of cauliflower only and bake.
