12 hard boiled eggs, cooled, peeled and cut in half lengthwise
3-4 T sweet pickle hot dog relish
1/2 teaspoon dry mustard
4-5 T Mayonnaise
4-5 T Ketchup
1/2 teaspoon @ salt and pepper
Paprika (optional)

Directions:

Place the whites on a serving plate, and the yolks in a medium bowl.

Mash the yolks with a fork until smooth.
Add the mustard, salt and pepper
Add the mayo, ketchup, and relish.
The filling should have a faintly pink tint from the ketchup, but not overly red. Add a bit more mayo or ketchup if the mixture is too thick.
Fill the egg white halves with the yolk mixture.
Sprinkle some paprika on them, or you can get fancier with some minced parsley, a shrimp or caviar, etc.

My father made the deviled eggs and this is the way he made them. You just need to go by feel on this one...adjusting the ingredients to get the right consistency.

Also, I like to use the smallest eggs I can find. They make cute little one bite deviled eggs.
