1/2 Cups Butter
1 1/4 Cup Sugar
2 Eggs (slightly beaten)
1 Cup Very Ripe Banana (mashed)
1 teaspoon Vanilla
2 Cups Unbleached All Purpose Flour
1/2 teaspoons Baking Soda
1/4 teaspoons Salt
1/2 Cup Milk
1/2 Cup Chopped Nuts (walnuts or pecans)

1. Cream butter then add sugar gradually. Add eggs and beat thoroughly. Add Banana pulp and vanilla.

2. Sift dry ingredients together and add alternately with the milk. Add the chopped nuts and mix gently until incorporated evenly.

3. Grease and flour two 8 inch cake pans and divide and spread batter evenly.

4. Bake cakes in 350ºF oven for 20 to 30 minutes until tooth pick comes out clean.

5. Frost with Caramel Frosting
 

CARAMEL FROSTING

2 Cups Brown Sugar
1 Cup Granulated Sugar
2 Tablespoons White Corn Syrup
2 Tablespoons Butter
2/3 Cup Cream

Directions:
Directions:
1. Cook all ingredients over low heat until sugars are dissolved.

2.Cover saucepan for 2-3 minutes while syrup boils.

3.Uncover and continue cooking to soft ball stage (238ºF). Cook to lukewarm and beat until of spreading consistency.

4.Spread between layers and on top and sides of cake.
