1 lb Camellia's Red Kidney Beans
1/2 lb ham or salt pork for seasoning
8 - 10 c water
1 onion chopped
1 toe garlic chopped
2 T celery chopped
2 T parsley chopped
1 large bay leaf
salt and pepper to taste
Cajun seasoning as desired (We like Slap Ya Mama)
Cajun Popcorn Rice

Directions:
I always soak my beans overnight, but you can cook it the same day if you choose. In a large pot mix beans and water, bring to a boil and cook for 10 minutes. In a separate skillet, brown the meat and set aside. In the drippings, saute onion, garlic, parsley and celery. Add this to bean mixture along with bay leaf. Add salt, pepper and Cajun seasoning to taste. Reduce heat and cover, simmering for about 1 to 1 1/2 hours or until tender. Add water while cooking if needed. If you like a creamier consistency, crush some beans against the side of the pot with a spoon. Serve over the popcorn rice (any rice will do, we like the popcorn)
