1-1/2C packed fresh mint leaves
3-1/4C water
Green food coloring
Sugar

Directions:
Directions:
Crush mint leaves and place in a saucepan with water. Bring to a boil. Remove from heat, cover, let stand 10 minutes. Strain and measure 3C infusion. Add a few drops of green food coloring if desired.

At this point follow the instructions of the Shur-Jel packet:
Mix Shur-Jel with infusion. Bring to a hard boil. Add sugar. Bring to a full rolling boil, boil 1 minute, stirring constantly.

Remove from heat, put into sterile jars & seal.
