4 lbs beef back ribs (mix in short ribs if desired)
4 Idaho or russet potatoes - peeled and cubed
1 bunch carrots - unpeeled and cut into 2" pieces
4 medium onions - halved and separated
1 27oz can sauerkraut
Fresh ground pepper

Directions:
Directions:
Arrange 1/2 the ribs on the bottom of a 6 quart dutch oven. Cover ribs with layers of potatoes, carrots and onions. Top with remaining ribs. Spoon undrained sauerkraut over top.

Cover and bake at 300 degrees until the meat is falling off the bone tender - about 4 hours.''

Drain juice from pan and reserve if desired to make soup or gravy. Season meat and vegetables with pepper to taste.
