Apricot Oatmeal Bars Recipe

CRUMB MIXTURE
1 1/4 c. flour
1 1/4 c. quick cooking oats
1/2 c. sugar
3/4 c. butter melted
1/2 tsp. baking soda
2 tsp. vanilla

FILLING
1 jar (10 oz.) apricot filling
1/2 c. flaked coconut

Preheat oven to 350º.

In a large bowl combine crumb mixture. Beat at low speed, scraping bowl often until mixture is crumbly, 1 - 2 minutes. Reserve 1 c. crumb mixture, press remaining mixture into greased 13 x 9 inch baking pan.

For filling spread apricot filling to within 1/2 inch from the edge of crumb mixture. Sprinkle with reserved crumb mixture and 1/2 c. flaked coconut.

Bake for 22 to 27 minutes or until edges are lightly browned. Cool completely before cutting into bars.
