Ingredients: 1 15-20 lb turkey 3 cups whiskey 2 cups maple syrup 3/4 cup kosher salt 3 T peppercorns 5 bay leaves 5 cloves minced garlic 3 oranges, peeled, and the peels cut into chunks Peels of 2 apples 4 sprigs rosemary 2 sticks butter

Directions:Combine 2 quarts water and all the brine ingredients (except the butter) in a large pot. Bring to a boil, stirring to dissolve the salt. Turn off heat and cool. Then place in refrigerator. Remove thawed turkey and wash thoroughly. Remove everything from inside turkey. Place in large pot or brining bag and cover turkey completely with brine. Close bag and refrigerate for 16-18 hours. After it has brined, remove from bag and rinse thoroughly inside and our with cold water and pat dry. Place on rack and cover tightly with aluminum foil. Be sure it is well sealed. Roast in 275 degree oven for 8 minutes per pound. Remove from oven and remove foil. Put stuffing in bird at this point if using. Brush all over with the softened butter. Increase oven to 375 degrees and roast for another 10 minutes per pound. Be sure to baste with pan juices and butter every 30 minutes. Roast until meat thermometer reaches 170. Should take a total of about 5 to 5 1/2 hours for a 20 lb turkey. This includes the time it was roasting with the foil. |
