1 rotisserie chicken or boil 2 chicken breasts...shred the chicken breasts and save the rest for another dish (chicken quesadillas)
1 onion (diced)
2 stalks celery plus one inner stalk with leaves (sliced thin)
1 Tbs. butter
2 32 oz. chicken broth
1 heaping Tbs. Chicken Better than Bouillon or 2 bouillon cubes
2 cans of biscuits
chopped parslely

Directions:
Directions:
Melt the butter in a Dutch oven...add the chopped onion and celery.
Saute vegetables, stirring until tender.
Add the chicken broth and bouillon...simmer for about 15 minutes.
Add the shredded chicken and chopped parsley and simmer while you prepare the dumplings
Open one can of biscuits, on a floured board press each biscuit together to form a large square.
Sprinkle flour over the top...using a rolling pin...roll thin to about ⅛ inch. Using a pizza cutter...cut the dough into 1 or 2 inch rectangles and place on plate. Open the second can of biscuits and repeat the process.
Drop the biscuits 2 or 3 at a time, stirring constantly. Do not pour them in all at once or you will end up with 1 giant dumpling!
Lower the heat and continue to stir for about 15 minutes or until the dumplings are done...not "doughy".
Be careful that the bottom does not scorch.
