4-6 Boneless Chicken Thighs (2-3 lbs)
1/4 cup Soy sauce
1/4 cup Honey
3 tbsp Rice Vinegar
1 glove Garlic
1 tsp Ginger - grated
1/2 tsp Dry Red Chili Peppers
1 tbsp Tomato Paste
2-3 cups Panko
1/4 cup Butter - melted
1 tbsp Corn Starch
1/2 cup cold Water
Salt & Pepper

Directions:
Directions:
Mix Soy sauce, Honey, Vinegar, Garlic, Ginger, Tomato paste and Red Chilies in a bowl.
Put chicken in Instant Pot and pour mixture over chicken.
Cook on Manual for 5-7 minutes.

Remove chicken, cut up into meatball-sized chunks.
Leave sauce in Instant Pot.

Mix Panko and butter in a large bowl, Salt & Pepper to taste, set aside.

Mix together Corn Starch & Cold Water (must be cold) until smooth.

Saute sauce on Medium heat to thicken.
Pour Corn Starch mixture into sauce and continue to saute until thick.

Coat chicken in Panko mixture and put on greased cookie sheet
Bake on low Broil until browned - flip over and brown other side
WARNING: Be watchful when cooking on broil - can easily burn chicken

Pour sauce over chicken and toss until coated.
