1 cup each black beans, navy beans and kidney beans - rinsed and drained
1/2 yellow onion, diced
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 jalapeño pepper, seeded and diced
1 small sweet potato, peeled and chopped
4 garlic cloves, minced
1/4 cup olive oil
1-1/2 tablespoons chili powder
1 tablespoon dry mustard
1 tablespoon cumin
2 tablespoons dried basil
1 teaspoon red pepper flakes
3 bay leaves
Salt and pepper to taste
1-14 ounce can diced tomatoes
1/4 cup Worcestershire Sauce
12 ounces dark beer
10 cups vegetable or chicken stock
1/4 cup corn meal

(Can add 1/2 cup bulgar with the last ingredients for a meaty flavor or can add any type of cooked meat.)

Optional Toppings:
Fresh cilantro, washed and chopped
Green onions, sliced
Jack cheese, grated
Sour cream

Directions:
Directions:
In a large stock pot, sauté onions in olive oil over medium heat until soft, about 10 minutes. Add peppers, sweet potato and garlic. Stir several more minutes. Add spices, stirring for 2 to 3 more minutes. Add tomatoes, Worcestershire, beer, stock and beans. Increase heat and bring to a boil. Turn down heat to low and add corn meal. Simmer for 20 minutes or until heated through and thickened.
