Ingredients: 1 lb Ground Pork (optional Turkey or Chicken) 1 head Iceberg lettuce (any large, leaf lettuce will do) 1 bunch green onions - chopped 1 large carrot - shredded 1/2 tsp garlic - minced 1 tsp fresh ginger - minced 1-2 tbsp Cilantro - chopped 1 Japaleno - chopped (Optional Heat) 1/4 cup small, unsalted Peanuts 3 tbsp Hoisin sauce 2 tbsp Soy sauce 2 tsp Sesame oil 1 tbsp Oil (Peanut, Coconut, or Vegetable) 1/4 - 1/2 tsp Hot Chili paste (your taste)

Directions:Heat Oil in Wok over med-high heat Cook Pork, onions, garlic and ginger until browned - 5-7 min Add carrot, Japaleno, Hoisin sauce & Soy Sauce, stir until heated Remove from heat, mix in Peanuts, Sesame oil, Chili paste and sprinkle with Cilantro
To serve: Spoon a small amount of mixture in each lettuce leaf. Drizzle with additional Soy sauce or Hoisin sauce, if desired.

Notes: One of Lisa's favorite Thai dishes. Took me several tries to get the flavor just right, using different ingredients, but finally nailed it.
