2 cups sugar
1 tbsp. corn meal
1 tbsp. flour
5 eggs
pinch of salt
1 cup pecans, chopped coarsely
1 cup crushed pineapple, drained
1 cup flaked coconut
1 stick butter, melted
1 unbaked pie shell

Directions:
Directions:
Beat the sugar, corn meal, flour, eggs and salt together. Gently stir in pecans, pineapple and coconut. Do not beat it. Stir in the melted butter and mix well.
Pour into the unbaked pie shell. Place into a 300º pre-heated oven for 50 - 50 minutes. After baking, cover the pie crust edges with aluminum foil to prevent from burning. Cook for 15 - 30 minutes more until the pie filling is set.
For the topping, you can use Cool Whip with a little almond extract. The sprinkle with toasted coconut.
